Not much is known about Mary Kennedy Core beyond the obvious. She was a brave young woman who left the security of the United States in the first years of the 1900s to work as a Methodist missionary in the Himalayas in India.

She stayed in India for some time - arriving around 1907 and staying for several years. She grew to love the food and the people of India. She adapted more than a hundred local recipes and published them.

She had returned to the United States by 1916 and was probably living in Nashville where her publisher, Abingdon Press, is still located.

The recipes have more than stood the test of a century and Mary Kennedy Core would certainly be amazed to find that Indian food has become increasingly popular in the United States.
